This is one of those recipes called 'comfort food', because it's great for comforting and reminds us of the traditional food that our grandmothers and moms always prepared. You can get a broth rib rice if you take the pan off the heat after cooking the rice, but I like to serve this rib rice in the pressure cooker with dry needle rice. In the broth there is also red wine, which gives an excellent flavor to this dish and makes the rice and meat more brown.

Ingredients for making Rice with ribs in the pressure cooker:

 1 kilogram of beef rib

 250 grams of needle rice

 ½ liter of red wine

 4 onions

 2 garlic cloves

 1 strand of oil

 salt, pepper, rosemary and parsley to taste

How to make Rice with ribs in the pressure cooker:

In a pressure cooker, place an onion and the minced garlic and drizzle with olive oil. Place over medium heat to sauté until golden and, when sautéed, introduce the rib clean of bones and excess fat.

Tip: Keep some of the rib fat as it adds flavor and juiciness to the meat.

Let the rib brown on all sides. Afterwards, add the wine and the remaining cross-cut onions. Allow the wine to reduce and top up with water to cover the rib. Season with salt, pepper and rosemary to taste.

Tip: Add a little salt and pepper and adjust the seasoning at the end of the recipe.

Close the pan and let it cook for 50 minutes after gaining pressure. Open and see the point of the rib: if it is to the point, shredding, return to the heat and let it boil for 8-10 minutes, to further refine the broth. Taste and correct the salt and pepper. If the rib is still hard, cook for a little longer.

Place the rice in the pan and, if there is little broth, top up with water to cover the rice about 2 fingers above. Simmer until the rice is done and the broth is reduced.

Tip: If you want, you can also prepare this recipe with cooked rice. In this case, place the rice in the pan and leave it on the fire until the broth reduces a little.
